I eat good food. I just eat a lot of it. And I have a really hard time not going back for seconds. I have such a hard time in fact, that even if I make myself a single meal—of any given size with any ingredients, no matter how complicated—I will go back to the kitchen and remake some more, even if it’s only a few bites’ worth. There’s just something about “seconds,” that allows me to finally feel full. Sure, I can blame my mother, my Midwestern upbringing or write 20 paragraphs on ‘emotional overeating’ but instead I will just share with you the seconds-worthy dinner that I ate, and ate some more, tonight.
Simple CSA Grilled Cheese
(all of these ingredients, save for the butter, are from my amazing CSA)
Melt a few pats of butter on a hot, non stick grill or pan
Once melted, place two thick slices of Italian (or French, or whatever bread) on the grill
After about a minute flip the bread and put sharp Cheddar cheese on one slice and white pepper Cheddar (or whatever kind of cheese) on the other.
Top with a thin layer of tomato slices and garnish with minced garlic chives
After about another minute, combine the slices and flip frequently for about another minute as to not burn either piece of bread
Enjoy
Try to convince yourself you don’t need more
Go to the kitchen to make more

Simple CSA Grilled Cheese Seconds (Or, the Open-Faced Grilled Cheese Sandwich I Didn’t Need After the First One)
Melt a pat of butter on a hot, non stick grill or pan
Once melted, place one thick slice of Italian (or French, or whatever bread) on the grill
After about a minute flip the bread and put whatever cheese you have left on it
Top with a thin layer of tomato slices and garnish with minced garlic chives
Let it sit for about another minute on the grill
